  • 4 medium zucchinis
  • 2 cups shredded cheese
  • 1 cup enchilada sauce
  • 1 can black beans, drained and rinsed
  • 1 cup corn
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/4 cup fresh cilantro, chopped

Instructions

  1. Preheat your oven to 375°F.
  2. Slice the zucchinis lengthwise and scoop out some of the flesh to create shells.
  3. In a mixing bowl, combine black beans, corn, spices, and half the cheese.
  4. Fill each zucchini shell with the mixture and place in a baking dish.
  5. Top with enchilada sauce and remaining cheese.
  6. Bake for 25-30 minutes until the cheese is melted and bubbly.
