  • ½ cup unsalted butter, softened
  • 2 large eggs
  • 1 tsp vanilla extract
  • ½ cup whole milk

Instructions

  1. Preheat your oven to 350°F (175°C) and line a cupcake tin with liners.
  2. In a large bowl, whisk together the flour, sugar, baking powder, baking soda, salt, cinnamon, ginger, and nutmeg.
  3. In another bowl, beat the butter until creamy, then add the eggs one at a time, mixing after each addition. Stir in the vanilla.
  4. Gradually add the dry ingredients to the wet ingredients, alternating with the milk, and mix until just combined.
  5. Fill each cupcake liner about 2/3 full with batter.
  6. Bake for 18-20 minutes or until a toothpick comes out clean. Let cool completely before frosting.
