  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 inch ginger, grated
  • 1 teaspoon curry powder
  • 1 teaspoon ground cumin
  • 1 bell pepper, chopped
  • 2 cups mixed vegetables (e.g. carrots, peas, corn)
  • 1 can (14 oz) coconut milk
  • 1 tablespoon soy sauce
  • 1 tablespoon lime juice
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Heat the coconut oil in a large skillet over medium heat.
  2. Add the onion and sauté until translucent.
  3. Stir in the garlic and ginger, cooking until fragrant.
  4. Add curry powder and ground cumin, stirring to combine.
  5. Add bell pepper and mixed vegetables, cooking for a few minutes.
  6. Pour in the coconut milk and soy sauce, and bring to a simmer.
  7. Let it cook for 10-15 minutes, until the vegetables are tender.
  8. Stir in the lime juice and season with salt and pepper.
  9. Serve hot, garnished with fresh cilantro.
