  • 1 cup butterscotch pudding mix
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup buttermilk

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a loaf pan.
  2. In a bowl, mix together the flour, baking soda, and salt.
  3. In another bowl, cream the butter and sugar until light and fluffy.
  4. Add the eggs one at a time, stirring well after each.
  5. Mix in the vanilla and butterscotch pudding.
  6. Alternate adding the flour mixture and buttermilk to the wet ingredients, starting and ending with the flour.
  7. Pour the batter into the prepared loaf pan.
  8. Bake for 50-60 minutes or until a toothpick comes out clean.
  9. Allow to cool before slicing and serving.

  • For a richer flavor, use brown sugar instead of granulated sugar.
