  • 4 strips turkey bacon
  • 1 cup brown rice
  • 1 can black beans, drained and rinsed
  • 1 cup corn
  • 1 avocado, diced
  • 1 cup salsa
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste

Instructions

  1. Cook the brown rice according to package instructions.
  2. In a skillet, cook the turkey bacon until crispy. Remove and crumble.
  3. In the same skillet, add ground beef and cook until browned. Drain excess fat.
  4. Add cumin, chili powder, salt, and pepper to the beef. Stir in black beans and corn, cook until heated through.
  5. Assemble the bowls: start with rice, top with the beef mixture, crumbled bacon, diced avocado, and salsa.
