Bulgur Salad with Lemon and Herbs

A refreshing and healthy bulgur salad enhanced with the zesty flavor of lemon and a mix of fresh herbs.

Ingredients

  • 1 cup bulgur wheat
  • 2 cups water
  • 1/2 teaspoon salt
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh mint, chopped
  • 1/4 cup cherry tomatoes, halved
  • 1/4 cup cucumber, diced
  • 1/4 cup red onion, diced

Instructions

  1. Rinse bulgur wheat under cold water.
  2. In a saucepan, bring water and salt to a boil.
  3. Add bulgur to the boiling water and reduce heat. Cover and simmer for 12-15 minutes.
  4. Remove from heat and let it cool.
  5. In a large bowl, combine olive oil, lemon juice, parsley, mint, tomatoes, cucumber, and red onion.
  6. Add cooled bulgur to the mixture and toss to combine.
  7. Season with salt and pepper to taste.

Notes

  • For added protein, consider adding chickpeas.
  • This salad can be prepared a day in advance for better flavor.
