Blackened Salmon Stuffed with Spinach & Parmesan

A delicious recipe for blackened salmon filled with a creamy spinach and parmesan mixture.

  • 4 salmon fillets
  • 2 cups fresh spinach
  • 1 cup grated parmesan cheese
  • 1/2 cup cream cheese
  • 2 tablespoons olive oil
  • 1 tablespoon blackening seasoning
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon lemon juice

Instructions

  1. Preheat your grill or skillet over medium-high heat.
  2. In a bowl, mix together the spinach, parmesan cheese, and cream cheese until well combined.
  3. Cut a pocket in each salmon fillet and stuff it with the spinach mixture.
  4. Rub the outside of the salmon with olive oil and season with blackening seasoning, garlic powder, salt, and pepper.
  5. Place the salmon on the grill or skillet and cook for about 6-8 minutes on each side or until it reaches your desired doneness.
  6. Drizzle lemon juice over the top before serving.

Notes

  • For best results, let the salmon sit for a few minutes after cooking before serving.
