- 4 salmon fillets
- 2 cups fresh spinach
- 1 cup grated parmesan cheese
- 1/2 cup cream cheese
- 2 tablespoons olive oil
- 1 tablespoon blackening seasoning
- 1 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon lemon juice
- Preheat your grill or skillet over medium-high heat.
- In a bowl, mix together the spinach, parmesan cheese, and cream cheese until well combined.
- Cut a pocket in each salmon fillet and stuff it with the spinach mixture.
- Rub the outside of the salmon with olive oil and season with blackening seasoning, garlic powder, salt, and pepper.
- Place the salmon on the grill or skillet and cook for about 6-8 minutes on each side or until it reaches your desired doneness.
- Drizzle lemon juice over the top before serving.
