  • 4 medium sweet potatoes
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 cup corn (fresh or frozen)
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 avocado, diced
  • 1/4 cup chopped cilantro
  • 1 lime, juiced

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Pierce the sweet potatoes with a fork and place them on a baking sheet.
  3. Bake for 45-50 minutes, or until tender.
  4. In a bowl, combine black beans, corn, cumin, paprika, garlic powder, salt, and pepper.
  5. Once sweet potatoes are done, remove from the oven and cut them in half lengthwise.
