Ingredients

  • 2 cups shredded birria meat
  • 1 cup cheese (such as Oaxaca or mozzarella)
  • 4 slices sourdough bread
  • 4 tablespoons butter
  • 1/2 cup consommé (for dipping)

Instructions

  1. In a skillet over medium heat, melt 1 tablespoon of butter.
  2. Place two slices of bread in the skillet and layer half of the cheese and birria on top.
  3. Add the remaining cheese and top with the second slice of bread.
  4. Cook until golden brown, then flip and cook the other side until the cheese melts.
  5. Serve with warm consommé for dipping.
