Beetroot and Pickle Sandwich

Ingredients

  • 2 slices whole grain bread
  • 1 medium beetroot, cooked and sliced
  • 2 tablespoons pickled cucumbers, sliced
  • 2 slices turkey bacon, cooked
  • 1 tablespoon mayonnaise
  • 1 handful mixed greens

Instructions

  1. Start by toasting the bread slices until golden brown.
  2. Spread mayonnaise on one side of each slice of bread.
  3. Layer the cooked turkey bacon, beetroot slices, and pickled cucumbers on one slice.
  4. Add a handful of mixed greens on top.
  5. Close the sandwich with the other slice of bread, mayonnaise side down.
  6. Cut the sandwich in half and serve immediately.

Notes

  • For a vegan option, substitute turkey bacon with tempeh bacon.
  • Adjust the amount of pickles to taste.
