Beef Stew

A delicious and comforting beef stew recipe with turkey bacon and a mix of vegetables.

Ingredients

  • 2 pounds beef chuck, cut into 1-inch cubes
  • 4 slices turkey bacon, chopped
  • 3 cups beef broth
  • 2 cups potatoes, diced
  • 1 cup carrots, sliced
  • 1 cup onions, diced
  • 4 cloves garlic, minced
  • 2 teaspoons dried thyme
  • 1 teaspoon black pepper
  • 1 teaspoon salt

Instructions

  1. In a large pot, cook turkey bacon over medium heat until crispy. Remove and set aside.
  2. In the same pot, add beef cubes and brown on all sides.
  3. Add onions and garlic, and sauté until translucent.
  4. Stir in the beef broth, thyme, salt, and pepper. Bring to a boil.
  5. Add potatoes, carrots, and cooked turkey bacon. Reduce heat to low and cover.
  6. Simmer for about 2 hours or until beef is tender.

Notes

  • For a thicker stew, mix 2 tablespoons of cornstarch with cold water and stir it into the stew during the last 15 minutes of cooking.
