Beef & Cheese Empanadas

Ingredients

  • 1 pound ground beef
  • 1 cup shredded cheese
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1 package empanada dough
  • 1 egg, beaten (for egg wash)

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a skillet, sauté the onion and garlic until soft.
  3. Add the ground beef, cumin, and paprika, and cook until the beef is browned.
  4. Remove from heat and let cool slightly. Stir in the cheese.
  5. Roll out empanada dough and cut into circles.
  6. Place a spoonful of the beef mixture on one half of each circle.
  7. Fold the dough over and seal edges with a fork.
  8. Brush with beaten egg.
  9. Bake for 20 minutes or until golden brown.

Notes

  • These empanadas can be frozen before baking.
  • Variation: Add chopped olives or peppers for extra flavor.
