  • 1/2 cup balsamic vinegar
  • 2 tablespoons honey
  • 2 tablespoons olive oil
  • 3 garlic cloves, minced

  • Salt and pepper to taste
  • 1 cup cherry tomatoes
  • 1 bell pepper, sliced

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a bowl, mix balsamic vinegar, honey, olive oil, garlic, oregano, salt, and pepper.
  3. In a large oven-safe skillet, heat olive oil over medium heat. Add chicken thighs and sear them for 4-5 minutes on each side.
  4. Pour the balsamic mixture over the chicken.
  5. Add cherry tomatoes and bell pepper to the skillet.
  6. Bake for 25-30 minutes until the chicken is cooked through.
  7. Let it rest for a few minutes before serving.
