Instructions

  1. In a large pot, cook the bacon over medium heat until crispy. Remove and crumble.
  2. In the same pot, add onion and garlic; sauté until soft.
  3. Add chicken broth and thyme; bring to a boil.
  4. Add gnocchi and cook until they float to the top.
  5. Stir in heavy cream and cheddar cheese; mix until cheese is melted.
  6. Season with salt and black pepper. Serve topped with crumbled bacon.
