Avocado Chicken Salad

A delicious and nutritious twist on a classic chicken salad, featuring creamy avocado and crispy turkey bacon.

Ingredients

  • 2 cups cooked chicken, shredded
  • 1 ripe avocado, mashed
  • 4 slices turkey bacon, cooked and crumbled
  • 1/4 cup Greek yogurt
  • 1 tablespoon lemon juice
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste
  • 1/4 cup diced celery
  • 1/4 cup chopped green onions

Instructions

  1. In a large bowl, combine the shredded chicken and mashed avocado.
  2. Add the Greek yogurt, lemon juice, garlic powder, onion powder, salt, and pepper; mix well.
  3. Fold in the turkey bacon, celery, and green onions.
  4. Serve on a bed of lettuce or in a sandwich.

Notes

  • For a spicier version, add diced jalapeños.
  • This salad can also be served in avocado halves for presentation.
