  • 2 pounds beef chuck, cut into 1-inch cubes
  • 1 tablespoon olive oil
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 4 cups beef broth
  • 2 cups carrots, sliced
  • 2 cups potatoes, diced
  • 1 cup celery, sliced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 bay leaf
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat. Add beef and brown on all sides.
  2. Add onion and garlic, and sauté until softened.
  3. Pour in beef broth and bring to a boil.
  4. Add carrots, potatoes, celery, thyme, rosemary, and bay leaf. Season with salt and pepper.
  5. Reduce heat and simmer for 1.5 to 2 hours, or until beef is tender.
  6. Remove bay leaf before serving.
