Instructions

  1. In a large pot, combine the chicken thighs, ginger, chicken broth, and water. Bring to a boil.
  2. Reduce heat and simmer for 20 minutes, until the chicken is cooked through.
  3. Remove the chicken and shred it with two forks; set aside.
  4. Add soy sauce and noodles to the pot and cook until the noodles are tender.
