  • 2 cups all-purpose flour
  • 1 teaspoon salt
  • 1 tablespoon sugar
  • 1 cup unsalted butter, chilled and diced
  • 6 to 8 apples, peeled, cored, and sliced
  • 3/4 cup sugar
  • 2 tablespoons all-purpose flour
  • 1 tablespoon lemon juice
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 tablespoon butter
  • 1 egg yolk
  • 2 tablespoons milk

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. In a bowl, mix flour, salt, and sugar. Cut in the butter until the mixture resembles coarse crumbs.
  3. Roll out half of the dough to fit a pie pan. Place it in the pan.
  4. In another bowl, toss sliced apples with sugar, flour, lemon juice, cinnamon, and nutmeg.
  5. Fill the pie crust with the apple mixture and dot with butter.
  6. Roll out the remaining dough and place it over the filling. Seal and cut slits in the top crust.
  7. Brush the crust with egg yolk mixed with milk.
  8. Bake for 15 minutes, then reduce the heat to 350°F (175°C) and continue baking for 35-45 minutes until apples are soft and crust is golden.

Notes

  • Let the pie cool for at least 2 hours before serving to set the filling.
